The Greek literally reads "upon /at Abiathar chief Priest" (epi Abiaqar) so as Gill's Exposition of the Entire Bible rightly points out: "The evangelist does not say that Abiathar was high priest, when David came and eat the showbread; he only says, "it was in the days of Abiarthar the high priest" ... certain it is, that this happened in his days; and as certain, that he was an high priest; and Mark might with great propriety call him so, though he was not strictly one, till after this business was over". In other words, the Greek does not say the event happened when Abiathar had been appointed high priest only that the events happened during High Priest Abiathar's life (or time) which is, strictly speaking, historically accurate.
To illustrate: If I were to say "World War II started in the time of/in the days of Queen Elizabeth" that would be historically true as she was alive indeed when the war started and it happened during her "day" (lifetime) rather than "rule". The fact that she wasn't Queen at the time of the event, being only 13 years old, does not negate the accuracy of the statement, since it simply identifies her by her later title. We do a similar thing when speaking of events in our grandfather's day, even though when those events happened he was not yet "a grandfather".
Thus the Greek allows for various renditions:
